The problem with food in tropical countries is that they easily spoil when not in the fridge or cooler. That is one reason why our dish called Pork Adobo is popular for any kind of trip whether picnic or camping. The adobo is cooked with vinegar and soy sauce. It is boiled until the meat is tender before frying it and the sauce is mixed again after frying. The adobo can last overnight and can still serve as lunch for the next day.
